My father is a diabetic and at Christmas and Thanksgiving we have a real hard time finding recipes for him that he can eat. He likes sweet potatoes with the marshmallow topping and I don't know how to do it for him. He is 71 years of age and had high blood pressure and has had open heart surgery. And he would like to eat this at the holidays if we can find a recipe for him this is the only time that he eats the sweet potatoes, but to him it's not a holiday without it. So if you could help I would really appreciate it.
I think he should have the marshmallow-topped sweet potatoes. I'd advise a serving of about 1/2 cup or so. I think we all realize that holiday foods are important to everybody. Hope he enjoys it!
