How does one really confirm that the honeymoon stage is over and that is not just puberty or hormones defining the need for extra insulin?

There is no test to confirm when the “honeymoon is over.” You will know when the honeymoon is over by paying attention to the daily/weekly glucose pattern on your logbook. Keep a logbook. If you see that the lunchtime and bedtime glucose levels are more often, consistently, elevated, the honeymoon is over. All honeymoons end.
