Ingredients
  

  • Oil for baking sheet
  • 4 tbsp butter
  • 1/3 c Frank’s Red Hot sauce
  • 1/3 c crumbled blue cheese Alternative: ½ cup ranch dressing and ½ cup shredded provolone cheese
  • Salt to taste
  • 1/3 c panko breadcrumbs
  • 2 stalks celery, finely chopped
  • 2 tsp minced garlic
  • 1 large egg
  • 1/2 c sliced green onions
  • 1/2 tsp onion powder
  • 1 lb ground chicken

Instructions
 

  • Preheat oven to 425°.
  • Brush a large baking sheet with oil.
  • In a saucepan, over medium heat, combine butter, hot sauce, blue cheese (Alternative: ½ cup ranch dressing and ½ cup shredded provolone cheese) and a pinch of salt.
  • Whisk until butter and cheese are melted and combined (~2min).
  • Remove from heat and let cool.
  • In a medium bowl, mix together panko bread crumbs, celery, garlic, egg, green onions, onion powder and some salt.
  • Add in ground chicken and half of the hot sauce mixture. Mix until evenly combined.
  • Using a 1 tbsp cookie scoop, create 1 inch meatballs and place on oiled baking sheet. Recipe yields ~40 meatballs.
  • Bake until golden brown (~15-17min, 165° internal temp)
  • Before serving, drizzle remaining hot sauce mixture over meatballs and sprinkle with green onions.
