
Buffalo Chicken Meatballs

Ingredients
- Oil for baking sheet
- 4 tbsp butter
- 1/3 c Frank’s Red Hot sauce
- 1/3 c crumbled blue cheese Alternative: ½ cup ranch dressing and ½ cup shredded provolone cheese
- Salt to taste
- 1/3 c panko breadcrumbs
- 2 stalks celery, finely chopped
- 2 tsp minced garlic
- 1 large egg
- 1/2 c sliced green onions
- 1/2 tsp onion powder
- 1 lb ground chicken
Instructions
- Preheat oven to 425°.
- Brush a large baking sheet with oil.
- In a saucepan, over medium heat, combine butter, hot sauce, blue cheese (Alternative: ½ cup ranch dressing and ½ cup shredded provolone cheese) and a pinch of salt.
- Whisk until butter and cheese are melted and combined (~2min).
- Remove from heat and let cool.
- In a medium bowl, mix together panko bread crumbs, celery, garlic, egg, green onions, onion powder and some salt.
- Add in ground chicken and half of the hot sauce mixture. Mix until evenly combined.
- Using a 1 tbsp cookie scoop, create 1 inch meatballs and place on oiled baking sheet. Recipe yields ~40 meatballs.
- Bake until golden brown (~15-17min, 165° internal temp)
- Before serving, drizzle remaining hot sauce mixture over meatballs and sprinkle with green onions.
