Christmas Sprinkle Cookies

Soft, buttery cookies with colorful holiday sprinkles for an instant pop of cheer. These are as fun to make as they are to eat! Plus, at 13g of carbohydrates per cookie, they make a great option for a quick and festive low blood sugar treatment.

Ingredients
  

  • 3/4 c unsalted butter
  • 1 c sugar
  • 1 egg + 1 yolk
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 3.5oz packet of instant vanilla pudding mix
  • 2 c flour
  • 1/2 c Christmas sprinkles or nonpareils

Instructions
 

  • Preheat oven to 350°F.
  • Line cookie sheets with parchment paper.
  • In a bowl, beat the butter and sugar for about 2 minutes.
  • Add in the egg, yolk, vanilla, baking soda and salt. Mix until combined.
  • Mix in the pudding mix packet.
  • Turn the mixer on low, add in the flour until just combined. Making sure not to overmix.
  • Finally add in the sprinkles until evenly incorporated.
  • Using a 1 Tbsp cookie scoop, place dough balls onto the prepared baking sheet 2” apart.
  • Bake for 8-10 minutes until the cookies are almost set.
  • Allow the cookies to cool on a baking sheet for ~5 minutes and then transfer to a cooling wire rack.
  • Enjoy!
