
Slow Cooker Creamy Tomato Basil Chicken

Ingredients
- 1 can (14oz) of diced tomatoes with herbs
- 1 cup tomato sauce
- 2 tsp minced garlic
- 1 tsp salt
- 1 tbsp Italian seasoning
- 1/2 tsp dried basil
- 1/2 tsp pepper
- 1/2 cup heavy cream
- 2 tbsp corn starch
- 4 trimmed boneless/skinless chicken breasts (1.5-2lbs)
- 2 tbsp finely chopped fresh basil
Instructions
- In a slow cooker, add the can of diced tomatoes, tomato sauce, garlic, salt, Italian seasoning, dried basil and pepper. Mix together.
- Whisk heavy cream and corn starch together. Add to the slow cooker.
- Add chicken breast to the sauce. Make sure the sauce covers the chicken.
- Cook on low for 4 hours, until the chicken reaches 165°F. (The exact cook time will depend on your slow cooker.)
- Serve over pasta and top with fresh basil. Add a salad or vegetables to make it a balanced meal.
