
Hearty Chickpea Soup

Ingredients
- 1 c diced onion
- 1 c diced carrots
- 1 c diced celery
- t tbsp minced garlic
- 1 tsp oregano
- 2-3 bay leaves
- 2 cans chickpeas, drained
- 1 can diced tomatoes
- 1 c frozen spinach
- 2.5 c vegetable broth
- 1/2 tsp salt
- 1/2 tbsp flour
- 1/4 c lemon juice
Instructions
- Heat up some olive oil in a large soup pot.
- Add diced onion, carrots and celery to the pot. Cook untilthe onion is translucent.
- Add in garlic, oregano and bay leaves. Cook until fragrant.
- Next, include the chickpeas and cook for a minute or two,stirring often.
- Pour in the diced tomatoes, frozen spinach, broth and ½ tspof salt.
- Bring the soup to a boil, then reduce the heat, cover thepot and simmer for about 10-15 min.
- Dissolve ½ Tbsp flour into ½ cup water. Mix to asmooth consistency and stir into the soup.
- Cook for another 5 min.
- Remove the pot from the heat and remove the bay leaves.
- Taste and season with salt and pepper.
- Lastly, add in the lemon juice.

Kid Friendly Tip: Although its appearance might not be as appealing, blending the soup into a puree could enhance its kid-friendly appeal.1
