Hearty Chickpea Soup

Ingredients
  

  • 1 c diced onion
  • 1 c diced carrots
  • 1 c diced celery
  • t tbsp minced garlic
  • 1 tsp oregano
  • 2-3 bay leaves
  • 2 cans chickpeas, drained
  • 1 can diced tomatoes
  • 1 c frozen spinach
  • 2.5 c vegetable broth
  • 1/2 tsp salt
  • 1/2 tbsp flour
  • 1/4 c lemon juice

Instructions
 

  • Heat up some olive oil in a large soup pot.
  • Add diced onion, carrots and celery to the pot. Cook untilthe onion is translucent.
  • Add in garlic, oregano and bay leaves. Cook until fragrant.
  • Next, include the chickpeas and cook for a minute or two,stirring often.
  • Pour in the diced tomatoes, frozen spinach, broth and ½ tspof salt.
  • Bring the soup to a boil, then reduce the heat, cover thepot and simmer for about 10-15 min.
  • Dissolve ½ Tbsp flour into ½ cup water. Mix to asmooth consistency and stir into the soup.
  • Cook for another 5 min.
  • Remove the pot from the heat and remove the bay leaves.
  • Taste and season with salt and pepper.
  • Lastly, add in the lemon juice.

Notes

Kid Friendly Tip: Although its appearance might not be as appealing, blending the soup into a puree could enhance its kid-friendly appeal.1
