Ingredients
  

Salad

  • 1 cup vanilla protein powder
  • 1/2 cup cassava flour
  • 3 tbsp sugar
  • 4 tbsp cream cheese
  • 1 cup blueberries (to be pureed)
  • 1 tbsp  lemon juice (to be pureed)

Instructions
 

  • Puree blueberries and lemon juice in a blender.
  • Mix protein powder, cassava flour, sugar, blueberry puree and cream cheese together.
  • Use your hands to kneed and get the dough together.
  • *If the dough is too dry, add a tsp of puree or water. If the dough is too wet, add a bit more cassava flour.
  • Use a cookie scoop to roll the batter into tablespoon sized balls.
  • Put into the fridge for 15 minutes to set.
  • In a large bowl, add the cooked lentils, chopped vegetables and parsley. Mix to combine.
