Gluten-Free Apple Crisp

Ingredients
  

Base

  • 4 cups peeled sliced apples(use your favorite, or a variety – Granny Smith, gala, Braeburn, honey crisp)
  • 1 tbsp lemon juice
  • ½ tsp cinnamon
  • 1 tbsp maple syrup

Crisp

  • 1 cup gluten-free rolled oats
  • ½ cup almond flour
  • ¼ cup chopped pecans
  • ¼ tsp ground nutmeg
  • ½ tsp cinnamon
  • ¼ cup melted butter (can substitute margarine or coconut oil)
  • ¼ cup maple syrup
  • dash salt

Instructions
 

  • Set oven to 375°.
  • In a large bowl, mix together sliced peeled apples with lemon juice, cinnamon, and maple syrup.
  • Add apple mixture to a 9x9 baking dish, spread out into one even layer.
  • To prepare the crisp topping, melt butter in the microwave. In a bowl, combine oats, almond flour, pecans, nutmeg, cinnamon, salt. Pour melted butter and maple syrup over oat mixture. Combine well until clumps form.
  • Add crisp topping blend onto apples in an even layer.
  • Bake for 30 minutes or until crisp starts to brown.
  • Serve warm on its own or top with vanilla ice cream or whipped cream.
  • Storage: store covered in the fridge for up to 3 days.
