Preheat oven to 425°.
Brush a large baking sheet with oil.
In a saucepan, over medium heat, combine butter, hot sauce, blue cheese (Alternative: ½ cup ranch dressing and ½ cup shredded provolone cheese) and a pinch of salt.
Whisk until butter and cheese are melted and combined (~2min).
Remove from heat and let cool.
In a medium bowl, mix together panko bread crumbs, celery, garlic, egg, green onions, onion powder and some salt.
Add in ground chicken and half of the hot sauce mixture. Mix until evenly combined.
Using a 1 tbsp cookie scoop, create 1 inch meatballs and place on oiled baking sheet. Recipe yields ~40 meatballs.
Bake until golden brown (~15-17min, 165° internal temp)
Before serving, drizzle remaining hot sauce mixture over meatballs and sprinkle with green onions.
