For the cookie mix, you can also use other favorite trail mix-ins such as shelled peanuts, dried cranberries, dried cherries, white chocolate chips, or helled sunflower seeds
Pre-heat oven to 350°.
In a bowl, combine, oats, flour, baking soda, and salt.
Cream together butter/margarine, peanut butter, sugar, and vanilla extract until smooth.
Beat in egg.
Gradually stir in flour mixture until combined and batter is smooth.
Add chocolate chips, raisins, pepitas, and M&Ms (or all whatever mix-ins you chose)
Drop by rounded tablespoon onto a baking sheet. Space at least 1” apart as they will spread.
Cook for 9-11 minutes. (The cookies may still appear pale because of the use of gluten-free flour.)
Allow to cool and enjoy!
