Gluten-Free Trail Mix Cookies

Ingredients
  

  • ½ cup butter or margarine, room temperature
  • cup peanut butter
  • ½ cup cane sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup certified gluten-free rolled oats
  • 1 cup gluten-free all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ¼ cup mini chocolate chips
  • ¼ cup raisins
  • ¼ cup pepitas
  • ¼ cup M&Ms

Instructions
 

  • For the cookie mix, you can also use other favorite trail mix-ins such as shelled peanuts, dried cranberries, dried cherries, white chocolate chips, or helled sunflower seeds
  • Pre-heat oven to 350°.
  • In a bowl, combine, oats, flour, baking soda, and salt.
  • Cream together butter/margarine, peanut butter, sugar, and vanilla extract until smooth.
  • Beat in egg.
  • Gradually stir in flour mixture until combined and batter is smooth.
  • Add chocolate chips, raisins, pepitas, and M&Ms (or all whatever mix-ins you chose)
  • Drop by rounded tablespoon onto a baking sheet. Space at least 1” apart as they will spread.
  • Cook for 9-11 minutes. (The cookies may still appear pale because of the use of gluten-free flour.)
  • Allow to cool and enjoy!
