Quinoa Pizza Bites

Turn leftover quinoa into quick pizza bites for an energizing snack packed with protein

- 2 ½ cups cooked quinoa
- 2 eggs
- 1 tsp olive oil
- ½ tsp garlic powder
- ¼ tsp ground black pepper
- ½ tsp salt
- 2 tsp Italian seasoning or oregano
- 1 cup shredded mozzarella cheese
- pizza or marinara sauce
- Additional toppings as desired: chopped pepperoni or sausage, shredded spinach, diced onion and peppers
Heat the oven to 375°.
In a large bowl, combine quinoa, eggs, olive oil, garlic powder, pepper, salt, Italian seasoning, and ½ cup mozzarella cheese. Stir until combined well.
Spray a standard muffin tin with oil or alternatively line each slot with parchment paper to ensure non-stick.
Spoon roughly ¼c up portion of mixture into each slot and tamp down with a spoon. The more densely-packed you can get each cup, the more crispy the “crust” will be.
Bake for 20 minutes.
Remove from oven, and top with additional toppings as desired, then sprinkle remaining ½ cup shredded cheese on top. Return to the oven for an additional 10 minutes.
Serve with hot pizza sauce for dipping or enjoy on their own.
