Chocolate Strawberry Yogurt Clusters

These bite-sized treats combine the richness of dark chocolate with the tang of creamy yogurt and the sweetness of strawberries. - 2 cup diced strawberries
- 1 cup vanilla Greek yogurt
- 2 tsp vanilla extract
- 2 cup bittersweet dark chocolate chips
- 2 tsp coconut oil
- <1/4 cup heavy cream
Line a large baking sheet with parchment paper.
Place diced strawberries, Greek yogurt and vanilla extract in a large bowl.
Mix together until the strawberries are well coated.
Using a heaping tablespoon, scoop the strawberry mixture onto the parchment lined baking sheet. Each cluster should be about 2 Tbsp.
Place the baking sheet in the freezer for 30-45 minutes. The cluster should be frozen but not too hard to eat.
About 10 minutes before taking the clusters out of the freezer, place the chocolate chips and coconut oil into a small bowl.
Melt in the microwave in 20 second increments, stirring between each increment. If the chocolate is too thick, add one tablespoon of heavy cream at a time until smooth.
Remove frozen clusters from the freezer. With a large spoon, dip each cluster into the melted chocolate and place back on the baking sheet.
Allow clusters to sit until the chocolate is hard, creating a shell.
