Indulge in this creamy and protein-packed Cottage Cheese Mac & Cheese. This recipe combines classic comfort food with a healthy twist, thanks to the addition of cottage cheese. - 16 oz box of pasta
- 1 cup cottage cheese
- 2 cups milk + 1/2 cup milk
- 2 tbsp cornstarch
- 4 oz shredded sharp cheddar cheese + shredded sharp cheddar cheese
- 4 oz shredded gouda cheese
- 1/2 tsp salt
- 1 tsp garlic powder
- 1/2 cup breadcrumbs optional
Preheat oven to 350°
Cook pasta according to the package directions.
In a blender, combine cottage cheese, 2 cups of milk, cornstarch, 4oz shredded sharp cheddar cheese, 4oz shredded gouda cheese and seasoning. Blend until smooth.
Once the pasta is cooked, stir pasta and cheese sauce into a large bowl.
Spray a 9x13 dish with cooking oil.
Add pasta with cheese sauce into the dish.
Put in oven for ~30 minutes (until sauce bubbles).
If the pasta becomes too dry, add an additional ½ cup milk and 4oz shredded sharp cheddar cheese. Mix together within 9x13 dish.
Sprinkle with optional breadcrumbs.
Place in oven for another 5-10 minutes.

Tips:
- The cottage cheese adds extra protein to this dish that reduces any blood sugar spike post meal.
- Switch the pasta out for a gluten free variety and do not add any breadcrumbs to make this recipe gluten free.
