Ingredients
  

  • 1 pint chopped cherry tomatoes ~1.5 cups
  • 1/4 lb chopped soppressata
  • 1/4 lb chopped prosciutto
  • 1/2 c chopped provolone cheese ~4 oz
  • 1/2 c chopped Genoa salami ~4 oz
  • 1/2 c sliced banana peppers
  • 1 tbsp banana pepper brine
  • 1/4 c chopped pepperoni ~4 oz
  • 1/4 c finely chopped white onion
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 c light mayonnaise
  • 2 cup thinly sliced romaine lettuce (packed cups)
  • Crostinis, tortilla chips, or cauliflower crackers for serving

Instructions
 

  • In a large bowl, mix together cherry tomato, soppressata, prosciutto, provolone cheese, Genoas salami, banana peppers, pepperoni, onion, dried basil, and dried oregano.
  • Add mayonnaise and pepper brine. Mix together.
  • Before serving, fold in romaine lettuce.
  • Serve with crostinis, tortilla chips, or cauliflower crackers.
