Cheesy Garlic Spaghetti Squash

Creamy Garlic Spaghetti Squash is a flavorful dish that offers a healthier twist on pasta. Roasted spaghetti squash is smothered in a creamy garlic sauce and topped with Italian cheeses, creating a deliciously comforting meal.

- 1 spaghetti squash
- 1 tbsp minced garlic
- 1/2 cup water
- 1 bouillon cube or 1 tsp Better than Bouillon
- 1 cup heavy cream
- 1 cup shredded Italian white cheese blend
- Fresh thyme, chopped finely
- Chives, chopped finely
- Pepper for seasoning
Preheat oven to 400°.
Cut spaghetti squash in half, length-wise. Scoop out the seeds. Place each half on a baking sheet, if the halves need more stability, you can place it on top of a cookie cutter.
Sprinkle each half with pepper.
In a bowl, combine minced garlic, heavy cream, water, bouillon, chives and thyme.
Sprinkle each spaghetti squash half with shredded cheese.
Split cream mixture in each spaghetti squash.
Top with additional cheese.
Roast in the oven for 40-50 minutes, until spaghetti squash is tender when poked with a fork.
Remove from oven. Mix with each spaghetti squash and serve immediately.
