Our Nutrition Team ensures that all meals are healthy, delicious, and will help with carb counts

Kristen O’Dell, MS, RD, CDCES, was diagnosed with type 1 diabetes at the age of nine, in 1998. Despite her resistance to accepting this diagnosis, it has been the driving force behind her pursuing a career as a dietitian. She earned her Master’s degree in Dietetics at D’Youville College and became a Certified Diabetes Care and Education Specialist. Kristen has worked in a children’s clinic, long term care nursing facilities, as an insulin pump trainer, and is now providing diabetes and nutrition counseling through her company, Focused Diabetes Solutions, all while being the Dietitian at CWD FFL conferences. Her goal is to empower people living with diabetes so that they can navigate all the ups and downs of life (and blood sugars). Kristen and her husband, Shawn, have three young children. Kristen enjoys cooking and baking in the kitchen, working in the garden, rooting for the Buffalo Bills, traveling around the world, and reading (when she can find a little free time).

Kathryn Hitchcock, MS, RD, LD, is a graduate of the university of Cincinnati, earning her dietetics degree and master of nutritional science in 2019. She has worked at Cincinnati Children’s Hospital for the past six years as a clinical dietitian in the department of gastrointestinal health. Kathryn specializes in nutrition support modalities and specialty diets for children with GI conditions. She works closely with kids who utilize CGM technology to monitor treatment for kids with glycogen storage diseases. She currently stays at home with her infant son and works PRN in the GI clinic. In her spare time she likes to run and spend time with her family outdoors and chase around her two dogs.

Bonnie Martin is mom to Sean, currently serving in the US Air Force and Sarah (dx’d in 2009), who is a 2020 graduate from the Nursing Program at Niagara University. Bonnie and her husband, Howard, live in Derby, NY. The family attended their first FFL conference exactly one year after diagnosis in 2010 and have been attending ever since. Finding the conference invaluable, Bonnie has been volunteering since 2018. Bonnie is thankful for her “FFL family” and everything she has learned for herself, her daughter and her family. At home, Bonnie works for a local school district.
