My friend was diagnosed with type 2 diabetes shortly after carbon monoxide poisoning. Is it possible that the carbon monoxide poisoning caused or was a contributing factor in the development of diabetes?

It is unlikely that the carbon monoxide poisoning was the only cause of your friend’s type 2 diabetes. He may have been predisposed to having diabetes, and the acute stress of the illness brought out his propensity for the disease.
