What are some snacks with slow acting carbohydrates and protein?

If by slow acting carbohydrates you mean foods that raise blood sugars at a slower pace, then I would recommend foods and snacks that combine a lower glycemic carbohydrate (whole grain crackers, whole grain breads, etc.) with a higher fiber content along with a healthy protein choice (lean meats and cheeses, peanut butter, etc). By combining these types of food together, it can provide for less of an excursion in post meal blood sugars. Other options include artificially sweetened low fat yogurts, trail mix with whole grain crackers, nuts, small amounts of dried fruit, etc.
