When does the “postprandial” clock start ticking — at the first bite of a meal, or after the last bite of a meal? Sometimes there can be an hour’s difference between the first and last bite, and certainly that would have a great effect on a “two hour postprandial” blood glucose test.

The recommendation for postprandial blood testing is at two hours after starting to eat the meal. It is not that this is right or wrong, but rather that everyone be on the same page, so when we talk about two hour postprandial tests we are all talking about the same thing.
