
Gluten-Free S'mores Bars
You don’t have to wait until your next campfire to enjoy the flavors of s'mores. Using a base of almond flour and almond butter, these s'mores bars are lower carb than traditional bars. Plus they're gluten free, so your friends with celiac can enjoy them too.
Ingredients
- ¼ cup melted butter or coconut oil
- ¼ cup maple syrup
- ½ cup almond butter
- 1 tsp vanilla extract
- ¼ cup almond milk (or other milk of choice)
- 1 egg
- ½ tsp salt
- 1 tsp baking powder
- 1 cup almond flour
- ½ cup semi-sweet chocolate chips
- ½ cup mini marshmallows
Instructions
- Heat the oven to 350°.
- Spray a 9x9 baking/cake pan with oil to prevent sticking and set aside for later.
- In a microwave safe large bowl, melt the butter/coconut oil.
- Mix in maple syrup, almond butter, vanilla extract, and almond milk, mixing well.
- Beat in the egg.
- In a separate bowl, combine salt, baking powder, and almond flour, and mix until combined.
- Gradually mix flour blend into the wet ingredients until combined.
- Mix in the chocolate chips and marshmallows, leaving a few extra chips and marshmallows for topping.
- Press dough into the cake pan, spreading evenly to the corners. Top with any remaining chocolate chips and marshmallows.
- Bake for 21-24 minutes.
- Let cool for at least 20 minutes before cutting.
- Store at room temperature for up to 2 days.
