Gluten-Free S'mores Bars

You don’t have to wait until your next campfire to enjoy the flavors of s'mores. Using a base of almond flour and almond butter, these s'mores bars are lower carb than traditional bars. Plus they're gluten free, so your friends with celiac can enjoy them too.

Ingredients
  

  • ¼ cup melted butter or coconut oil
  • ¼ cup maple syrup
  • ½ cup almond butter
  • 1 tsp vanilla extract
  • ¼ cup almond milk (or other milk of choice)
  • 1 egg
  • ½ tsp salt
  • 1 tsp baking powder
  • 1 cup almond flour
  • ½ cup semi-sweet chocolate chips
  • ½ cup mini marshmallows

Instructions
 

  • Heat the oven to 350°.
  • Spray a 9x9 baking/cake pan with oil to prevent sticking and set aside for later.
  • In a microwave safe large bowl, melt the butter/coconut oil.
  • Mix in maple syrup, almond butter, vanilla extract, and almond milk, mixing well.
  • Beat in the egg.
  • In a separate bowl, combine salt, baking powder, and almond flour, and mix until combined.
  • Gradually mix flour blend into the wet ingredients until combined.
  • Mix in the chocolate chips and marshmallows, leaving a few extra chips and marshmallows for topping.
  • Press dough into the cake pan, spreading evenly to the corners. Top with any remaining chocolate chips and marshmallows.
  • Bake for 21-24 minutes.
  • Let cool for at least 20 minutes before cutting.
  • Store at room temperature for up to 2 days.
