
Nutty Granola Bars
These no-bake granola bars come together quickly for an on-the-go snack or breakfast.
Ingredients
- 1 ¼ cup mixed nuts, raw
- ½ cup old-fashioned oats (can use gluten-free, if needed)
- 4 dates, pitted
- ½ cup nut butter (choose your favorite)
- ¼ cup liquid sweetener (ex. honey, maple syrup, agave, date syrup)
- ½ tsp salt
- 1 tsp vanilla extract
- 1 cup puffed rice cereal
Drizzle
- 1 tbsp nut butter
- 2 tbsp semi-sweet chocolate chips
Instructions
- Place a layer of parchment paper into a 9x9” pan. Spray a small amount of oil on the base of the pan initially, then place the parchment paper on top – the oil allows the paper to stick to the pan easier.
- Add all the ingredients EXCEPT puffed rice cereal and drizzle ingredients into either a blender or food processor.
- Pulse mixture for3-5 seconds at a time, until mixture combines into a ball. Some of the ingredients, like the nuts may stay in larger chunks. It’s up to you how small you want the nuts processed.
- Pour into a bowl and add 1 cup puffed rice cereal, folding in until combined.
- Pour the mixture into the 9x9” pan and press down using a spatula.
- Place in the fridge for at least 1 hour to set up.
- Use a knife to release the bars from the side of the pan. Cut into 12 equal rectangles and seton a plate.
- To make the drizzle – microwave the nut butter with chocolate chips in 15 second increments, stirring after each interval until melted.
- Drizzle on top of the bars as much chocolate as you desire! Alternatively, you could dip the tops of the bars into the chocolate for an even layer on the whole bar.
- Keep in the fridge for up to 2 weeks for an easy, on-the-go snack.
