
Gluten-Free Trail Mix Cookies
These cookies are perfect for a hike ... or a snack!
Ingredients
- ½ cup butter or margarine, room temperature
- ⅓ cup peanut butter
- ½ cup cane sugar
- 1 tsp vanilla extract
- 1 egg
- 1 cup certified gluten-free rolled oats
- 1 cup gluten-free all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- ¼ cup mini chocolate chips
- ¼ cup raisins
- ¼ cup pepitas
- ¼ cup M&Ms
Instructions
- For the cookie mix, you can also use other favorite trail mix-ins such as shelled peanuts, dried cranberries, dried cherries, white chocolate chips, or helled sunflower seeds
- Pre-heat oven to 350°.
- In a bowl, combine, oats, flour, baking soda, and salt.
- Cream together butter/margarine, peanut butter, sugar, and vanilla extract until smooth.
- Beat in egg.
- Gradually stir in flour mixture until combined and batter is smooth.
- Add chocolate chips, raisins, pepitas, and M&Ms (or all whatever mix-ins you chose)
- Drop by rounded tablespoon onto a baking sheet. Space at least 1” apart as they will spread.
- Cook for 9-11 minutes. (The cookies may still appear pale because of the use of gluten-free flour.)
- Allow to cool and enjoy!
